bombtastic banana bread

yep. that's right.  it's like fantastic but even better, it's bombtastic.  i know it's the month of the pumpkin but i really love banana bread!  i've also never shared a recipe on the blog and wanted to go with one of my favorites to pop the recipe cherry.

ingredients
1 cup white sugar
1/2 cup brown sugar
1/2 cup butter - room temperature
2 eggs (beaten)
4-5 bananas (i use 5) finely crushed
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 teaspoon vanilla
 1/4 cup chocolate chips (optional)

directions

  1. preheat oven to 350 degrees. spray one 9x5 inch loaf pan with non-stick spray coating
  2. cream together the butter and sugars
  3. add eggs and crushed bananas - combine well
  4. sift together flour, baking soda, salt and cinnamon. add to creamed mixture with vanilla extract, add chocolate chips if desired
  5. pour into loaf pan 
  6. cook for 60-75 minutes

cook time varies with the number of bananas you use.  i always set my timer for an hour and start to check the middle with a fork to see if it's cooked through.  

this banana bread never lasts more than a day in this house.  we love it! make it this weekend, you won't regret it and your house will smell amazing.
